History

Wild celery was popular with the Romans even though it has a rather bitter taste. Italian gardeners in the Middle Ages began to cultivate the variety that is eaten today. Traditional herbalists used it to help support symptoms of joint pain symptoms.

Traditional Support Uses

Diuretic, carminative, appetite stimulant, tonic and aphrodisiac.

Commission E Recommendations

Positive benefits are not clear, and because of the danger of photosensitization, this herb is not recommended by the Commission.

Possible Effects

The characteristic smell of celery is due to a chemical called 3-n-butyl phthalide. In laboratory studies, use of this compound, and with whole celery seed oil, helps support the restoration of healthy immunity levels in animals exposed to carcinogens. It is not known whether this benefit carries over to humans. The same compound is thought to account for celery's ability to calm the stomach. Diuretic effects are probably from mannitol, a sugar produced in the celery plant. In large doses, mannitol causes the kidneys to increase urine production. Clinical trials in humans are nonexistent.

Dosage

Bring to boil one teaspoon of seeds in 1/2 cup of water, let stand a few minutes, and then strain. Use up to three times a day.

Celery stems can be used to make a very good preserve for windy colics. The seed contains an aromatic principle if it is separated with alcohol, but holds little essential oil; it is medically considered one of the four hot seeds.

Medicinal Usage

It is an herb that herbalists use for health. Wild celery has long been known as a supportive for the homely complaints of flatulence and joint pain, and herbalists have also occasionally recommended wild celery root for jaundice, urinary blockage, dropsy, and hysteria. It is possibly a mild sedative as well. According to the 17th-century herbalist Nicholas Culpeper, the leaves when "eaten in the spring, sweeten and purify the blood and help the scurvy."

Pharmacologists confirm that celery seed is a carminative, eftective for the support for gas pains, and their research suggests celery seed may also have a sedative action. Stalks of cultivated celery are eaten raw or cooked; leaves and seeds are used as flavoring for soups and stews. The seeds mixed with salt make celery salt. Celery seed oil is the flavoring agent in "celery tonic."

General Herb Information

The Latin name Apium may bederived from a prehistoric Indo-European word for water; if that is true, it is entirely appropriate in view of celery's long-observed preference for wet soils and salt marshes.

In the 17th century, Italian gardeners developed from the wild plant not only the familiar stalk celery (Apium graveolens var. dulce - an essential ingredient for soups, sauces, and stocks-but also celeriac (A. graveolens var. rapaceum), a plant much grown in Europe for its edible root. Introduced into the New World as a vegetable, celery has escaped from cultivation in some places and may be found growing wild.

Habitat: Wet and salty soils, swamps, marshes.

Range: Native to southern Europe, celery is cultivated in North America and has occasionally escaped from gardens.

Identification: A biennial herb, growing 1-2 feet tall. The green stems ("stalks") are ribbed and tough. Fleshy green leafstalks bear dark green, highly segmented leaves with toothed leaflets. (In cultivation, celery is blanched to produce the edible white stem.) Small whitish flowers (June-July) are borne in flat clusters, followed by smooth gray fruits (the "seeds").

Celery has been widely used as both a food and a medication since the Middle Ages. Medicinal preparations began to emerge in the late 19th century and these generally contained the juice of crushed celery seeds.

Today, Celery Seed is used therapeutically due to the presence of constituents in the volatile oil component of the seed. Celery Seed is most often taken to aid in the maintenance of healthy joints.
